When I say “to taste”, I mean it literally. Before adding any seasonings, taste the dish. Add seasonings gradually, tasting again and again.

Cooking should be a creative process. I intend recipes as a guideline only – what the dish actually ends up like is up to you. Cooking without tasting throughout would be like trying to paint with your eyes closed, and following recipes to the letter is like painting-by-numbers – not a very satisfying achievement, in my book.

Baking a cake is the only instance when a recipe really needs to be followed, or your cake may not rise. But at all other times, I encourage you to be as creative as you can – make it your own dish, not mine. You too can be Vegetabulous!
