Quick Minestrone
Onion
Tomatoes (fresh, tinned or both)
Vegetables (eg carrot, celery, leek)
1 Vegetarian Stock Cube
Water, or Wine & Water combination
Tomato puree, paste or Pasta Sauce
Tinned Beans (eg, Red Kidney, Pinto, 3-Beans – or for low-carb, Soy Beans)
Macaroni or other small pasta
To Taste: (if desired)
Fresh or Dried Herbs (eg Basil, Oregano)
Salt & Pepper
Dash of Lemon juice or Cider Vinegar
To serve: (if desired)
Cheese (eg Shaved Parmesan or Grated Cheddar)*
Throw the chopped vegetables and stock cube into the water, bring to the boil and add macaroni. Simmer until macaroni softens, add tomatoes, tomato puree & tinned beans. Season to taste.
Serve with a sprinkle of grated cheese, fresh herbs and crusty bread.
Note: * To make a dairy-free or vegan version, just skip the cheese garnish.
If you’re using the quick ‘n easy “throw it all in together” method, you need to cut the vegetables appropriately so that they’ll all be cooked around the same time – so cut slower-cooking veges (such as potatoes) smaller than quicker-cooking ones (such as zucchini).
