Canneloni Tubes (“Instant”)

Filling:
Spinach (frozen or fresh)
Feta Cheese
Ricotta Cheese
Egg
Lemon Juice
Yoghurt or Cream (if desired)
Pepper

Topping:
Tomato-based Pasta Sauce (bought or made)
Grated Cheese (Tasty or Parmesan)
Red Wine, White Wine, Beer or Water

If using fresh spinach, steam or microwave briefly until wilted. If using frozen, defrost.

Chop the Feta into cubes and mix together with other filling ingredients to taste. Put into Canelloni tubes with a teaspoon, holding your fingers over the other end of the tube to fill it. Lay them in a greased baking dish.

Mix together Pasta-sauce with a little wine, beer or water (if the topping is too dry the tubes won’t cook properly). Carefully spoon it over tubes, making sure to cover all pasta surfaces. Cover with foil and bake in a moderate oven for about twenty minutes. Remove foil, sprinkle with cheese and bake uncovered for a further twenty minutes or so (until pasta tubes have softened).
